It is important for people to know the impact of what they eat and why they eat it. Eating organ meat has been out of fashion for a while, why is this? The organs are the most vitamin and mineral dense cut of the animal. 

 

Where does the term nose to tail come from?

The term was coined by chef Fergus Henderson in his book The whole beast: nose to tail eating. This book is a collection of recipes in which the unconventional pieces of animals are used in creative recipes.

The term is often used by followers of the carnivore diet (followers mainly eat meat and animal products) and in the ketogenic diet (Low carbohydrate diet).

I came across the term myself after reading an article about the nutritional value of organ meats.

What does it mean?

Nose to tail principle means that an animal that is slaughtered is consumed in full. So, not only the meat and muscles but also organs, blood and bones. The main consideration for this is respect for the animal and environment. It caught my attention because of the nutritional value of animal products that we usually do not consume.

Environmental impact and nose to tail eating. 

In the last 20 years a lot has been written about livestock farming and its possible negative impact on the environment. Is there a sustainable way to consume meat in the future?

This is a complex question which the nose to tail principal only partly answers.

In Western culture it is customary to only eat the meat and muscle of an animal. This is the largest mass of a carcass, but certainly not the only thing that is edible.  Organs like the brain, liver, heart, kidneys and intestines are also consumable. Other examples are the feet, tails, bones, skin and blood.

The suggestion is that if we consume more of the animal we would need less animals to fulfill or need. This will lower the environmental impact of consuming animal protein.

This goes as far as groups of people who jointly have an animal slaughtered, divided and eaten. If you do this locally, the impact on the environment is even smaller because less transport is required than, for example, meat that is in the supermarket.

Health aspects and nose to tail eating.

Consuming meat has been linked to many negative health aspects. A few of these are heart attacks, artery blockage, constipation and it promotes tumor growth.

This is often reinforced by people who follow a completely plant-based diet (vegan). In my opinion meat fits perfectly in a well-balanced diet and it takes a big leap to designate only meat as a cause of the above health challenges.

You often hear about the nose to tail principle from people who follow a  carnivore diet or the keto diet. Especially with the carnivore diet, it is important to consume different parts of the animal to get all the vitamins and minerals. My personal opinion is that a healthy mix of different food types is better then a limiting to one source diet.

The best way to get vitamin C if you don’t have access to fruit is to eat beef or pork liver. Beef liver contains 31mg and pork liver 23mg per 100g. For comparison an apple contains 4.6mg and an orange 53.2g per 100g. This applies to raw liver, vitamin C is very volatile when treated with heat. It will be cooked out if you heat the meat.

The table below shows clearly why organ meat is also called super food or natural multivitamins. You also see that organs are sometimes 10 to 50 times more nutritious in terms of nutrients than muscles, vegetables and or fruit.

Myths concerning  liver meat

A common myth surrounding the liver is that it filters and stores toxins, which would make it unhealthy to consume. It is true that the liver filters out toxins, but they are not stored. Toxins that the body cannot filter are most often found in fat tissue and the nervous system.

Consuming organ meats

My quest for alternative ways to consume enough vitamins and minerals brought me to the nose to tail principle. Vitamins and minerals from organic sources are better for you than synthetically fabricated vitamins and minerals. The bio availability is higher in organic sources. Over consuming non bio available vitamins and minerals can be harmful for the human body. 

Eating cooked organ meats was not working for me because of the taste and texture. Developing 100% grass-fed organ meat supplements was the best solution for me.
